A Study on Social Perceptions and Practices Shaped Around Mumbar Dolma

This study was carried out to determine the shape and content characteristics of stuffed sheep sausages, one of the traditional offal dishes of Turkish culinary culture, and the social perceptions and practices around stuffed sheep sausages. The secondary data of the study is through literature review; The primary data was obtained using an unstructured interview technique from five cultural transmitters over the age of forty who are fluent in traditional culture and reside in the provinces of Hatay, Gaziantep and Adana. As a result of the content analysis made on the data obtained, it was determined that the stuffed sheep sausages made in Hatay, Gaziantep and Adanaprovinces showed traditional differences in terms of structure; it has been determined that it has taken on a metaphorical structure in the process (perception of elegant food, perception of a source of healing and perception of a sign of respect) and incorporates social practices related to some stages of life. It is thought that the study will be an important resource for those who want to understand the deep ties between food culture and social relations
